Ready to fuel your running with color and performance-boosting nutrients? Here are 8 Fall foods for runners, along with healthy recipes for athletes and how they support your health and performance!
Why Runners Meals Should Include Seasonal Foods
Including seasonal foods in your runners meals has a lot of benefits. Fruits and veggies picked at peak ripeness taste better, are fresher and can be more nutrient-dense than out-of-season options. Have you ever tried strawberries in the off-season versus in-season? The difference is night and day.
Seasonal eating can also be easier on your budget and is a great way to support your local farmers. I always recommend checking out your local farmer’s market and be adventurous with your eating! Don’t be afraid to try new foods. Some of my favorite fruits and vegetables became staples simply by buying them and figuring out how to cook and eat them.
8 Fall Foods for Runners Meals
These Fall foods are ideal for runners because they’re packed with carbs to fuel your workouts and aid in exercise recovery, they’re high in fiber to support gut and heart health and are loaded with vitamins and minerals to enhance overall performance and health. Here are eight seasonal Fall favorites to incorporate into your runners meals.
1. Pumpkin
Whether roasted or using pumpkin puree, pumpkin is loaded with vitamin A, vitamin C, potassium, copper and antioxidants. It’s also a great source of carbs and fiber. Look for pure pumpkin puree in cans, not pumpkin pie filling, which often has added sugar.
Not only is pumpkin good for you, the seeds are too! Pumpkin seeds provide healthy fats, some extra protein and fiber.
- Nutrition: 1 cup pumpkin puree= 24 g carbs, 8 g fiber, 2 g protein, 0 g fat
- Nutrition: ¼ cup pumpkin seeds= 4 g carbs, 2 g fiber, 9 g protein, 15 g fat
- Tip: The Vitamin C in pumpkin aids in collagen production which is another benefit for runners.
2. Sweet Potatoes
Sweet potatoes provide energizing complex carbs, perfect for fueling endurance and for exercise recovery. They’re rich in potassium, vitamins A, vitamin C, manganese, copper and antioxidants. Quick options like microwaveable sweet potatoes make meal prep more simple!
- Nutrition: 1 large sweet potato (with skin) = 37 g carbs, 6 g fiber, 3 g protein, 0 g fat
3. Butternut Squash
Roasted butternut squash is a Fall staple in my house and butternut squash soup works perfectly as a healthy lunch for runners. Not only it is hydrating, it helps to replenish glycogen stores post-workout.
My favorite way to prepare butternut squash is to buy it fresh then peel, cube and roast it on a baking sheet (then blend with an apple, bone broth and some spices if I’m making soup)!
Like pumpkin and sweet potatoes, butternut squash is high in vitamin A, vitamin C, carbs and fiber to keep your energy up and support digestion and gut health.
- Nutrition: 1 cup cubed = 22 g carbs, 6 g fiber, 2 g protein, 0 g fat
4. Beets
Beets are great to buy fresh, then peel and roast. A quicker and less messy option is to buy precooked beets. My favorite brand is Love Beets and I love that they come in a variety of flavors like white wine balsamic which is great to add to a salad.
Beets are naturally rich in nitrates, which convert to nitric oxide in the body which improves blood flow and supports exercise recovery. They’re also a good source of folate.
- Nutrition: 1 cup sliced = 17 g carbs, 3 g fiber, 3 g protein, 0 g fat
5. Apples
Apples are one of my favorite Fall foods because I love making homemade crockpot applesauce which can be a good pre-workout food for runners as it has carbs to power through a workout and is easy to digest.
There is such a wide variety of apple but my favorite type is Envy apples. To me they have a cinnamon taste and are delicious!
- Nutrition: 1 large apple = 31 g carbs, 5 g fiber, 1 g protein, 0 g fat
6. Kale
Kale is such a nutrient-packed Fall food for runners’ meals. It can be bland tasting so flavoring it right is key, especially when eating it in something like a salad. Kale is a super versatile ingredient that can be added to soups, salads, grain bowls and sandwiches.
There are many varieties, the 2 common types I see in the store most often is curly kale and tuscan kale. My personal favorite is curly kale and I like to massage it before eating it in a salad because it makes it less bitter.
Kale is an excellent source of vitamin K and vitamin C.
- Nutrition: 2 cups raw = 3 g carbs, 1 g fiber, 1 g protein, 0 g fat
- Tip: If taking blood thinners, maintaining consistent vitamin K intake is really important. Check with a doctor or dietitian before incorporating into meals
7. Brussels Sprouts
Roasted Brussels sprouts with a sprinkle of parmesan is a delicious Fall side dish. They’re also great tossed into pasta, salads or grain bowls. Brussels Sprouts are nutrient-dense with vitamins C, vitamin K and folate to support overall health.
- Nutrition: 1 cup = 11 g carbs, 4 g fiber, 4 g protein, 0 g fat
8. Carrots
Carrots are so simple yet versatile. They’re great raw, roasted or added to soup, stew and chili. They provide vitamin A, vitamin C, vitamin K and potassium which support immune function.
- Nutrition: 1 cup chopped = 12 g carbs, 3 g fiber, 1 g protein, 0 g fat
